Truth is thieves tend to steal big or forget about it. 0-conf isn't going to help them steal 50 inch HDTV's or anything of serious numbers. Merchants would wait it out for 10 minutes on anything high risk.
0-Conf is as risky as the Merchants allows it to be. The damage from people double spending on coffees is minimal. A smart Merchant would wait the 10 minutes for confirmations on anything worth stealing.
I can recommend Ramnode and nfoservers. Heard good thing about Vultr but never used them.

VPS are used for server hosting like game server and websites. VPS =/= VPN
